The school if italian cuisine "IAL" in Kiev
 
The school of hotel and restaurant business "IAL" Serramazzoni opens a new preparatory school in Kiev. The unveiling of the courses planned for the October of the following year during the time of the exhibition "BRAVO ITALIA" that will take place under the PROMEC Chamber of Commerce of Modena's patronage.

Start of the work of the school, as well as provision of the services and consultations on the questions of italian cuisine are planned for the beginning of the year 2006.
 

The decision was taken together with the Chamber of Commerce of Modena PROMEC, "Italia a tavola" and the group of Modena food products producers for the purpose of facilitation of popularization and familiarization with the products of italian cuisine, methods and techniques that enable to protect cultural and gastronomical traditions of Emiliano-Romagnola region and Italy on the whole.

The school "IAL" familiarizes operators in the restaurant and gastronomical business, particularly cooks of Ukrainian capital, with the advanced food production and processing techniques, as well as with the best methods of preparation, utilization, testing, consumption and storage of products, and in the first place with those that are considered to be the traditional ones. Denominazione di origine protetta (DOP) (The token that testifies the quality of the ingredients)) Indicazione geografica protetta (IGP) (The token that guarantees the area of production of the product is ecologically clean) and Specialità tradizionali garantite (STG) (The guarantee of the originality of the product), that enables the final consumer to estimate the product properly.

Thus our initiative in aimed at the accompaniment of italian producers abroad. The provision of services for the facilitation of the placing of their products, at the same time guaranteeing the best result in the collaboration with the foreign client. The security against the risk of counterfeit and falsification of the products, the ways of its traditional use in recipes, dishes and menu of italian cuisine, in that way vouching for the quality, authenticity and traditional nature.

 





 
 
     
The school of hotel and restaurant business "IAL" of Serramazzoni city
 
    Situated in several kilometers from Modena, the city, where "Ferrari", traditional balsamic vinegar, prosciutto and Lambrusco wine are produced, the School "IAL" Serramazzoni is famous due to its thirty-year experience in manpower training and bringing up professional victullers, cooks, waiters and confectioners.

The school has always made efforts to the proper development and expansion of gastronomy culture, promoting health, pleasure and comfort slogans and combining the traditional and regional cuisine, cooked in accordance with old recipes with the adhering the local atmosphere.
 

Since the moment of its foundation School provides trainings for the workers of gastronomy sector and restaurant business on the professional level, providing the skilled teaching that is the key factor for the increase of restaurant services level.


For gourmets "IAL" School offers various activities that favor the insight and extending ones knowledge in the technical aspects concerning the content and primary ingredient and product processing.


In the course of the last years there were made certain steps towards the training not only italian cuisine specialists, but also those who in particular specialize in cookery of Emiliano-Romagnola region – there had been created a special program, meeting hence the requirements of some foreign lands.


One of our most significant projects took place in Kenya and it implied the training of future teachers of hotel business in Nairobi, as well as other projects on Antillean islands, Hungary and Brazil.


Taking in consideration an experience mentioned above and guided by the wish to satisfy the needs of those countries where the market of traditional food products already exists or just is being in the process of standing, but at the same time lack the experience of utilization and preparation of such kind of products, the school of hotel and restaurant business "IAL" Serramazzoni has decided to realize a project of creation of training centers and gastronomy schools beyond the borders of Italy.

Five-day courses providing 24 hours of study + 16 hours of attendance specialized enterprises and short probation period in one of the school's restaurants.

In case of staying in Italy for 7 days there is an opportunity to organize sightseeing tourist tours around the places of cultural and historic interest.

Extension courses are also available with the minimum 30-days probation period (in case of staying in Italy in the course of 30 days).

They are divided into two categories:

  1. Courses that provide 40 hours of theme training and 120 hours of probation period at the prestige enterprises of Emiliano-Romagnola region (restaurants and hotel) with accommodation facilities.
    Tourist and theme excursions on weekends with preparation and tourist purposes.

  2. Courses that provide 80 hours of theme training and 80 hours of probation period at the prestige enterprises of Emiliano-Romagnola region (restaurants and hotel) with accommodation facilities.
    Tourist and theme excursions on weekends with preparation and tourist purposes.

Both kinds of courses call to attention of the operators in such area as: chefs, cooks, victullars that already possess the basic knowledge in the field of italian cuisine.

 

 

One-month probation period in Italy (4 weeks + trip)

This proposal calls to attention of the operators in the restaurant business area as: chefs, cooks, victullars, that already possess the basic knowledge in the field of italian cuisine and also those who have already attended the appropriate courses of this school in Kiev.
The probation period will take place at the prestige enterprises of Emiliano-Romagnola region (restaurants and hotel) with accommodation facilities.
It also foresees the estimation of the level of participant's preparedness in order to find a proper enterprise that will correspond his/her skills.


Three-month probation period in Italy (4 weeks + trip)

This proposal calls to attention of the operators in the restaurant business area as: chefs, cooks, victullars, that already possess the basic knowledge in the field of italian cuisine and also those who have already attended the appropriate courses of this school in Kiev.
The probation period will take place at the prestige enterprises of Emiliano-Romagnola region (restaurants and hotel) with accommodation facilities.
It also foresees the estimation of the level of participant's preparedness in order to find a proper enterprise that will correspond his/her skills.
Three-month probation period in Italy may be hold at the enterprise in the Apennines during the winter season or at the one of the enterprises of italian Riviera.

On completion of the course the certificate is issued testifying the attendance of the courses and gaining appropriate attainments and skills in the area of italian cuisine.

The cost of the course organized in Italy includes the cost of studying, as well as nutrition, accommodation and transport costs. Transport costs for arriving to the country are self-paid by the participant.
