IParmigiano Reggiano is a classic
and prestigious Italian cheese,
famous and valued worldwide for
its genuine features and tracing
its roots to antiquity. The most
well-known and detailed early mention
of this cheese can be found in the
Decameron by Bocacco, from the year
1350.
The name “Parmigiano Reggiano”
is protected by a special law (ie.
trademarked) and is associated with
the cheeses produced in the area,
specifically the provinces of Modena,
Parma and Redgo Emilia, Bologna
and Mantyja
The brand “Grana Parmigiano
Reggiano” has been designated
“the name protected by origin”
since 1938.

has been produced utilizing the same trade
secrets for more than seven centuries.
The tradition, maturity and complete absense
of preservatives are guaranteed by the
marking of the crust, making Parmigiano
Reggiano a unique, high-quality cheese

Some information
about the procedure of production |
The production of
1 kg of Parmigiano Reggiano takes 16 liters
of the highest quality milk. The cheese
gains its distinctive features through the
process of natural ripening for a period
of 12 –24 months, which gives it its
easy digestive properties.
For instance, the assimilation of 100 grams
of Parmigiano Reggiano takes around 45 minutes,
contrary to the 4 hours needed for a similar
amount of red meat. The protein value of
100 grams of Parmigiano Reggiano corresponds
to 185 grams of ham, 225 grams of trout
and 190 grams of pork.
Parmigiano Reggiano also has some medicinal
applications due to its nutritional qualities,
particularly in the area of pediatrics because
of the digestibility of its protein elements,
calcium and vitamins – all of which
contribute to the growth of a young organism. |
